Dessert: Orange Snow with Brandied Peaches

Serves 6

In a large bowl, combine:

2/3 cup Sugar
1 envelope unflavored Gelatin

Add:

1-1/2 cups boiling Water

stirring until gelatin is dissolved. Stir in:

2 tsp. Orange Zest
1/3 cup fresh Orange Juice

Chill the mixture until it becomes syrupy: do not let the gelatin set. Beat until stiff:

3 Egg Whites
1/2 tsp. Salt

Add to the chilled mixture and beat about 5 min. until it begins to thicken. Pour into a pretty, chilled serving bowl or individual dessert dishes. Refrigerate until set, at least 2 hours. Serve with Brandied Peaches or other marinated fruits such as:
Rasberries and Framboise Liqueur
Oranges and Grand Marnier
Pitted Cherries and Kirsch
